Sharon's Shepherd's Pie

ed Sharon Shepherd’s Pie Ingredients for the meat : 600 g of minced meat 2 medium onions 1 tablespoon of beefstock 1 can cream of mushroom 3 tablespoon of HP sauce 1 teaspoon of mixed herbs 2 carrots , 1 cup of peas (or frozen mix vegetables) 1 can of diced or crushed tomatoes 6 large potatoes A bit of butter 1/2 cup of fresh milk Salt and pepper to taste Some breadcrumbs Casserole dish for baking Method Minced Meat : 1. Fry onions in small amount of oil till golden brown. 2. Add minced meat. 3. Add all ingredients except potatoes. 4. Fry till cook. Mash Potatoes : 1. Boil potatoes until soft or microwave for about 20 minutes with small amount of water. 2. Mash potatoes and add in fresh milk slowly. Not too soft. Pie 1. Placed minced meat in a casserole dish ensuring there is enough layer for the mash potatoes. 2. Placed gently the layer of mash potatoes. Make sure to cover all the sides so that when baking, the minced meat would not seep through. 3. Sprinkle some breadcrumbs. 4. Lastly dot with butter on top of the breadcrumbs. 5. Baked in overn for 20 minutes at 180 degree celcius. Happy Baking and Have a Feast!

Melting Moments (in the centre)



(Preparation time : 15 minutes)(cooking time : 15 minutes)(Makes 45)

Ingredients

180 g unsalted butter (do not use salted butter unless you like it a bit salty)
1/3 cup icing sugar
1 teaspoon vanilla essence
1/3 cup corn flour
1 cup plain flour
100 g packet glace cherries

Preheat oven to moderate 180 deg cel.

1. Using electric beaters, beat butter, sugar and essence in small mixing bowl until light and creamy. Using a flat-bladed knife, stir in sifted flours. Stir until just combined and mixture is smooth.

2. Spoon mixture into a piping bag fitted with a 1 cm-wide fluted piping nozzle; pipe mixture into rosettes 4 cm in diameter onto prepared tray.

3. Top rosette with half a cherry. Bake 15 minutes or until lightly golden and crisp. Transfer biscuits to wire rack to cool.
